Crispy Smashed Parsnip Chips

Serves 4

  • 6 cups water
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cloves garlic, smashed
  • 1 teaspoon salt
  • 1.5 pounds parsnips, peeled and cut into 1-cm thick coins
  • 2 tablespoons oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup finely grated Parmesan cheese

In a medium saucepan, combine the water, lemon juice, paprika, thyme, bay leaf, garlic, and salt. Add the parsnips, cover with a lid, and simmer until fork tender, approximately 30 minutes.

Preheat oven to 350 degrees F.

Remove the parsnips from the water and uniformly smash them with the broad back side of a turner, or something similar. The thinner they are pressed, the crisper they will become. Arrange the smashed parsnips on a parchment-lined baking sheet and brush both sides with oil, followed by an even sprinkling of onion powder, garlic powder, and Parmesan cheese. Place the baking sheet in the oven and bake until crisp and golden brown, approximately 40 to 45 minutes. Let the parsnips cool to the touch before serving. Serve warm.

Serves 4

  • 4 ounces cream cheese
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • 5 ounces spinach, chopped
  • 1 cup (4 ounces) grated cheddar cheese, additional for garnish
  • Parsnip chips, crackers, toasted bread, or fresh vegetables, for serving

Preheat oven to 250 degrees F.

In a medium mixing bowl, whip together the cream cheese and sour cream until smooth. Add garlic and onion powder, smoked paprika, Dijon mustard, honey, and salt, mixing well. Stir in chopped spinach and grated cheddar cheese until evenly distributed. Transfer mixture to an oven-safe baking dish and smooth the top.

Bake for 15 to 20 minutes, until the dip is hot in the center and the spinach is tender. Stir and optionally garnish with additional grated cheddar cheese.

Let cool slightly before serving. Serve warm with chips, crackers, toasted bread, or fresh vegetables.
